Follow-up inspection conducted for inspection report# KLAI-CKHQ3U
High temperature dish machine has now been fixed. Capable of reaching 71.0C at the plate level during the rinse cycle. Hugo's Mexican Kitchen may now re-open their dining room area for the public.
Liquid soap and paper towel were noted available by the bar handwash sink.

Outstanding violations that must be addressed before the next follow-up inspection:
Ensure all bleach sanitizer solution are mixed so that 100 - 200 ppm chlorine residual is detected when tested. Over 200 ppm chlorine residual (test strips were bleached out) in all 3 premixed sanitizer spray bottles at the start of the inspection. Issue corrected. Staff was instructed how to mix and read chlorine test strips to ensure 100 - 200 ppm of chlorine residual is detected before use.
Clean the noted grease buildup on the fume hood.
Clean and sanitize the cabinet below the bar handwash sink.
Provide an updated floor plan with the new equipment added to the facility.
Caulk the 2-compartment sink to the wall in the kitchen area.
