302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): In the meat dept, the sanitizer spray bottle was recorded at 0ppm QUATS/bleach. Staff stated that the bottle is filled from dispenser and showed the dispensing unit of 'cleaner'. Inadequate cleaning and sanitizing of food contact surfaces could result in potential food contamination. Staff refilled the bottle from QUATS dispenser and 200ppm QUATS concentration recorded.
Corrective Action(s): Please ensure that all food contact surfaces are properly cleaned and sanitized.

Observation (CORRECTED DURING INSPECTION): Frozen bucket of clam chowder and chilli were stored at room temperature. Staff stated that kitchen staff needs it today and they are keeping it there to thaw. Both food products were still frozen and staff moved them back to walk in cooler.
Corrective Action(s): Please follow one of the following practices to thaw food:
- Store in cooler overnight at or below 4C
- Under cold running water
- In the microwave (small portions)
DO NOT THAW potentially hazardous food at room temperature.

Observation: Rodent activity observed throughout the facility but primarily in the following area:
- Inside prep cooler
- Back kitchen prep table (bottom shelving)
- In dishwashing area
- Back storage room under shelving units
- Meat dept - along the walls, under soup maker equipment
Corrective Action(s): Please speak with your pest control company and implement appropriate control measures immediately.
- Deep clean the facility including all the shelving units, corners, along the walls and under the equipment/prep tables.
- Remove rodent droppings and disinfect the area with 1 part bleach to 9 part water solution.
- Monitor regular pest activity.
- Seal any gaps/entry points.
- Use pest proof containers for food storage.
- Discard any food products that are damaged by rodents/pests.

Observation: The following were noted as potential entry points:
- Front prep area: behind the cooking line there is a hole
- Dishwashing area: Under the sink, the wall is exposed and huge hole observed
- Kitchen area: Ceiling tile is not properly placed and gap observed
- Meat dept: Ceiling tile was partially open, ceiling screen is broken on one side leaving gap and the floor drains have huge gaps
Corrective Action(s): To prevent the pest issue in the facility, please seal any gap/entry points.

Observation: Build up of dirt/food debris observed in the following areas:
- Along the walls in walk in cooler (kitchen)
- Small stand up cooler: spill on left side inside the cooler
- Under the deep fryers
- Under the soup makers in the meat dept
Corrective Action(s): Please deep clean the facility including the areas noted above.

Comments

Routine inspection conducted.

- Temperature of coolers recorded at or below 4C
- Freezers recorded at or below -18C
- Hot holding units recorded above 60C
- All handwash sinks had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 200ppm QUATS solution recorded in spray bottle.
- High temp mechanical dishwasher reached 74C on dish level during rinse cycle.
- Food was stored at least 6 inches off the floor in the dry storage room.
- Permit posted at the front.
- Pest Control company conducts monthly checks. Report verified.

Follow up inspection to be conducted.
