- Two-step cooking method reviewed for the donair meats
- Handwashing station supplied with hot and cold running water, liquid soap and paper twoel
- Three compartment sink and drain plugs available for manual warewashing
Note: reviewed the steps of manual warewashing and the importance of sanitizing and air drying utensils and equipment. Continue with cleaning the hand nozzle on the three compartment sink
- Food grade sanitizer in a spray bottle registered at 200 ppm chlorine
- No signs of obvious pest activity
- Overall sanitation is satisfactory
