Observation (CORRECTED DURING INSPECTION): QUATS sanitizer pails with wiping cloths (X5) measured at 0-50 ppm QUATS concentration during time of inspection. Staff replaced the sanitizer solution and wiping cloths in all the sanitizer pails during time of inspection which measured at 200 ppm QUATS concentration with test strips.
Corrective Action(s): Change QUATS sanitizer pails more frequently, especially during busy hours to ensure QUATS concentration is maintained at 200 ppm. Train all staff on how to change the solution and how to check sanitizer concentration with available test strips on site to ensure food contact surfaces are sanitized adequately throughout the day.

Observation: Few flies observed during time of inspection in the front service area and in the back kitchen area. Operator mentioned that the front door is opened frequently during the day and that the flies also enter through the drive thru window. Pest reports from the professional pest control company were available on site for review. Fly traps are observed in the back of the restaurant and near the drive thru window.
Corrective Action(s): Keep doors and windows closed throughout the day to prevent fly entry. Monitor fly poplation and contact the contracted pest control company to assess and provide solutions if fly pest problem gets worse. Install more fly traps in the non-food preparation areas if fly populaiton increases.
