RE: Hand delivered the Food Operating Permit

- it is a lunch time and buffet is open
- hot holding unit- measured the temperature at above 60C
- cold holding unit - less than 4C
- daily temperature logs are up to date
- bleach is available as approved sanitizer ( measured at 200ppm )
- spray bottle properly labelled
- low temp dishwasher is supplied with approved sanitizer and measured at 100ppm at the final rinse.
