Observation (CORRECTED DURING INSPECTION): The staff was observed to dump food into garbage from hot holding unit and bang insert on side of garbage and return insert back inside hot holding unit. CORRECTED DURING INSPECTION - item placed in three compartment sink for warewashing

Corrective Action(s): Have a discussion with staff regarding the garbage. Nothing should touch the garbage, equipment or hands, without being washed immediately afterwards.

Ensure staff are taught to inspect items after cleaning to ensure items are adequately cleaned prior to placing items away for future use.

- No evidence of pests
- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Three functional sink plugs available for use observed
- Raw meat stored away from Ready to Eat food items in walk in cooler and chest freezer
- Proper thawing techniques
- First In First out and date stamping methods observed in use

NOTE: Previous rodent infestation appears to be eliminated. Old droppings found behind safe and none elsewhere. All traps were empty during time of inspection. Adequate supply of traps. Discuss obtaining Pest Technician invoices from either GTC or Pest Technician directly
