Observation (CORRECTED DURING INSPECTION): Minced garlic was left at room temperature. Staff informed that the chef uses it to cook and places the container back in the cooler, but the chef had gone on break. The container had been sitting at room temperature since 11:00 am (2 hours).
Corrective Action(s): The minced garlic container was placed back in the cooler at the time of inspection. Ensure potentially hazardous foods are stored at temperatures 4C or below, or 60C or above, to prevent the growth of pathogens that can cause foodborne illness.

Corrective Action(s): Cover all the containers in the cooler. Uncovered containers can accidently spill into other foods and cause a cross contamination that can lead to foodborne illness. Date to be corrected by: IMMEDIATELY.

Routine inspection conducted.

Temperatures:
- Double door freezer: -21C
- Double door coolers (2): <4C
- Under-counter preparation cooler: 4C
- Hot holding display unit: 62C
- Hot holding steam unit: 78C
- Rice cooker: 60C

Sanitation:
- Hand washing sink was adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- Sanitizer pail was labelled and had 200 ppm QUATS. Staff was observed re-filling the pails at the time of inspection.
- Knives were in good sanitary condition and stored on a magnetic strip.
- The ventilation hood was in satisfactory sanitary condition.
- 2-compartment sink had plugs.

Storage:
- Dry ingredients are stored in pest proof containers.
- Rice and noodle bags were stored on shelves under the counters.
- All food was stored off the floor.

Pest Control:
- No signs of pest activity noted at the time of inspection.
- Facility is monitored by a professional pest control company.

Administration:
- All managers and supervisors have valid Food Safe level 1 certification or equivalent.
- Temperature logs are up to date.
- Pest control inspection reports are kept in records at the main office.

COVID-19 Safety:
- T&T corporate COVID-19 Safety plan is available on site. It has also been circulated via email and messaging services to all staff.
- Temperature checks occur at the store entrance for all staff and customers.
- Double masks are worn by most staff.
- High touch surfaces are disinfected frequently.
- Breaks are staggered.
- Lunch room has dividers.
- Maximum occupancy is posted in common staff areas.
