-Follow-up inspection to August 28, 2017.
-Sanitizer pails at 200ppm were prepared in the back kitchen and front cook line.
-4 containers of soup broth made 5 hours ago were at 11C. Large pot of broth in the walk-in freezer from this morning was at 5C. Broth must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Broth containers were moved into the walk-in freezer for rapid cooling at the time of inspection. Use thermometer to monitor cooling process.
-Raw foods were properly stored below and separately from ready-to-eat foods at the time of inspection.
