Premise is sanitary. No signs of pests. Hot and cold water available. Hand washing sink with liquid soap, paper towels and running water in use. 3 compartment sink in use. QUAT sanitizer in use at 200 ppm detected. Note: Ensure to get extra supply of chemical testing strips for QUATS. Old one is running out. Products are protected from contamination. All coolers at 4C and below. Temperature logs in use good. One freezer at -18C and below. Storage and fermentation containers are sanitary. Single use food grade cotton cheese cloths/covers used in processing and laundered with bleach and hot temperatures. Cotton covers are sanitary at the time of inspection.
