Observation: Scoops for dispensing dry products for marinating meats stored directly in dry product containers.
Corrective Action(s): Store all scoops and other dispensing utensils outside of dry products and in a sanitary manner at all times. Correct immediately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
- At the time of inspection paper towels not placed inside the paper towel dispenser at the designated hand wash station.
- Lid to the chest freezer in back area damaged. Insulation material exposed and sections held together using duct tape.
Corrective Action(s):
- Staff stated the dispensing mechanism has been damaged and entire dispenser to be replaced. In the interim paper towels placed next to the hand wash station. Correct immediately.
- Replace the lid to the chest freezer or replace entire unit. Ensure all equipment is in good working condition. Correct by March 31, 2022.

Comments

Routine inspection:

Hand sink after correction provided with liquid soap and paper towels.
3 compartment sink available for use.
Bleach sanitizer solution available for use.
Band saw cleaned with a bleach solution. Thoroughly clean and sanitize this piece of equipment at least every 4 hours.
Grinder is cleaned and sanitized at the end of the day.
Walk in cooler at 4 degrees C.
Both display coolers at or below 4 degrees C.
Retail area freezer at -15 degrees C.
Invoices/receipts available for review.

As mentioned in the previous inspection, interior of the walk in cooler to be repainted. Rusted sections still observed.
