Observation:
Gaps found at the bottom of doors leading into the dry storage room. Gaps also found on the bottom of an exterior double door (found between two theatres), and gaps found between the double doors. The gaps will allow the entrance of pests.
Corrective Action(s):
Install door guards/sweeps to the doors to prevent the entry of pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) Food stains observed on the interior walls of the walk-in-cooler, especially behind racks. This will attract pests.
2) Food stains observed on walls in the back kitchen area, storage rooms, and on the legs and undersides of prep tables and sinks. This will attract pests
Corrective Action(s):
1) Wash the walls (floor to ceiling) in the walk-in-cooler, more frequently, with hot water and soap to remove the food stains. Move the racks away from the walls prior to washing them, so access to the wall surface is easier.

2) Wash the walls (floor to ceiling) in the back kitchen area, storage rooms, and the legs and underside of prep tables and sinks with hot water and soap to remove the food stains. Increase the frequency this is done and add it to your "detailed cleaning" list.

Comments

A routine inspection was completed:
- Coolers below 4C or colder; freezers -16C or colder; hot holding units 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had a rinse cycle of 72C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water
- All foods stored in food grade containers; covered; date coded; foods stored in groups; and food stored 6" off the floor on racks, shelves, and cupboards.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid FoodSafe certified staff present.
- General sanitation level is good. Improvement needed in the mentioned areas.
- Minimal mice droppings found in the dry storage room and in the area between two movies theatres. This area has an external door and a door that leads into the pop dispensing room. Monthly contract with a pest company is present to monitor for pests. Snap traps and tin cans present.

NOTE
- There is ice build up along the walk-in-freezer door frame. This could indicate that the door seals are damaged, and/or the door is not closing and sealing properly. Recommend having them inspected.
- The exhaust hood was professionally cleaned in July 2021. The exhaust hood has not been used as the external food company no longer operates in the space. The exhaust hood and duct could still have grease and dust, this is a fire hazard and/or could attract pests. Recommend contacting a professional company to clean the exhaust hood and duct to remove and accumulated grease and dust.
