Corrective Action(s): Monitor and record the product temperatures in the right-side drawers of the top-side cooler, and adjust the thermostat or repair the reefer unit if necessary to maintain temperatures below 4 C.

Observation: The walk-in beer cooler ceiling and vertical surfaces have mold. The interior surfaces of the cooler must be clean.

Observation: An unfinished plywood sheet has been attached to the ceiling above the "top-side" cooler. All unfinished/bare wood must be sealed with paint to be made impervious to moisture and be easy to clean.
Corrective Action(s): Paint the plywood with at least two coats of washable (oil-based) paint.

Dishwasher final rinse residual measures 100 ppm Cl. Glass washer final rinse residual measures 12.5 ppm Iodine.
