Comments

-Hand-sinks stocked w/ soap and paper towels
-Cooler temps satisfactory
-Dishwasher reached >71 Celsius during rinse cycle
-Chlorine sanitizer available at >100ppm concentration, any time water gets cloudy change it- ensure to wash wiping cloths before storing in bleach solution
-General sanitation of establishment is ok

**Temp log sheet Oct record is in place- operator could not locate the Nov data, ensure to monitor dishwasher and record ( at least once daily) on log sheet and sanitizer concentration at least once daily

**Discussed: hair control for staff ( use hair net) and glove usages by staff- wash and change gloves anytime it gets contaminated or the staff changes tasks
**Continue to minimize food handling on site to help with eradication of cockroaches ( all foods to be prepared in commissary kitchen (ie: Salad Shirazi) as discussed
** Check temp of all foods upon receiving and record in receiving log sheet
** All bucket of pre cooked foods to be labelled with date of preparation in cooler- keep in cooler Max 2 days
