Walk in cooler - food protection and general sanitation is good - all food items are covered * except cut onions - cover the onions.
Also ensure that all items (including buckets) in walk in cooler are stored off the floor (use shelves) to enable easy cleaning.
Food processing equipment (dough mixer, meat slicer, dough sheeter and wall installed chopper) maintained in sanitary condition - keep up the good work.
General sanitation is satisfactory at this time
Store non-food equipment (electric drill) away from food storage areas.
