Observation (CORRECTED DURING INSPECTION): No bleach sanitizer was prepared at time of inspection.
Corrective Action(s): Spray bottle with 100 ppm chlorine residual was prepared at time of inspection. Ensure that you clean and sanitize food contact surfaces including cutting boards after use. Soap and water solution is adequate for cleaning, but it will not properly sanitize.

Comments

Routine inspection conducted. Premise is generally maintained in good sanitary condition. The following was noted at time of inspection:

Temperatures:
- Prep cooler at 4C
- Stand-up stainless steel coolers at 4C or less
- Beverage cooler with creamer at 4C
- Chest freezers vary from -18 to -24C
- Stand-up freezer at -10C
- Temperature logs have not been maintained since February 18, 2020. Ensure that you check temperatures every day

Hygiene and Sanitizing:
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at a final rinse cycle of 79C at the plate (Min: 71C)
- Cups, plates, utensils generally stored in good sanitary condition in the kitchen area
- Ventilation canopy generally well maintained

Storage practices:
- Food products elevated at least 6" off the floor
- Chemicals stored separately from dry storage products
- Shelving is well maintained and in good sanitary condition. Minor cleaning needs to occur underneath the racks of the keg cooler

Pest Control:
- No evidence of recent, visible pest activity noted at time of inspection

Administrative practices:
- FoodSafe 1 present for all staff members (Expiry: Aug 2022 / July 2024)
