Observation: Food debris build-up observed in areas behind freezers in receiving area, on floors underneath freezers and storaage racks, and on floors inside walk-in cooler.
Corrective action: Thoroughly clean & maintain these areas

Note: Ensure any containers with Raw meats are stored on the bottom shelf to prevent contamination of ready - to - eat foods
-Minor maintenance required in areas such as behind sinks to prevent food debris falling behind. Maintenance should not be done using tuck tape.
-All handsinks and washrooms supplied with hot & cold running water, liquid soap and paper towels.
-All cooling units were at or below 4C
-All freezing units were at or below -18C
-All hot held items contained at or above 60C
-Sushi bar temperature measured at 1C
-High-temperature dishwasher measured at 72C at plate level during the final rinse cycle
-Sanitizer bucket with wiping cloths measured 200 ppm chlorine with a test strip
