Observation (CORRECTED DURING INSPECTION): High temperature dishwasher was not able to sanitize food contact surfaces adequately (see violation code 308). Manual dishwashing method reviewed with the staff. Use manual dishwashing method until the dishwasher is serviced.

Observation: High temperature dishwasher's sanitizing cycle was measured multiple times at the plate level (69C, 70C, 65.5C and 69C).
Corrective Action(s): The dishwasher is to be serviced. Sanitizing cycle at the plate level must be measured at 71C or higher. Correct this by: immediately.

Comments

Routine inspection conducted:
Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels.
Coolers, including cream dispensers, were measured less than 4C.
Freezers were measured less than -18C.
Hot holding items were measured higher than 60C.
General sanitation is adequate.
No sign of recent pest activity was noted at this time. Routine pest control in place.
QUATS sanitizer pails measured at 200 ppm as per test strips. Pails are time tracked and changed every 2 hours or when visibly soiled.
Dry storage is adequate.

Signature was not collected due to COVID 19.
