Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No sanitizing step used during dishwashing and lack of proper sanitizer used to wipe surfaces. Lack of proper sanitizing allows for survival of harmful micro-organisms on utensil and food contact surfaces.
Correction: Operator is told to use manual three-compartment sink dishwashing method: scrape, wash at 45°C, rinse at 45°C, sanitize for 30 seconds at 45°C using 100-200ppm bleach (Chlorine solution), then air dry. To be Corrected by Friday, August 7, 2020.
