Observation (CORRECTED DURING INSPECTION): Hot holding unit (sandwich prep table, nearest washroom) bottom compartments measured 33-40°C at time of inspection. Products were time stamped showing products were placd into hot holding minutes before temperature was checked.
**Corrected during inspection** Unit restarted and timers reset. Hot plate measured 66.8°C at time of inspection.

Unit is to be monitored to ensure products can maintain temperatures of 60°C or greater. If unit cannot, unit to be serviced.
Please ensure all products are cooked/heated to 74°C (or as per Food Safety Plan) before putting into hot holding unit.
