Observation (CORRECTED DURING INSPECTION): Buckets of sanitizer observed at 50ppm QUAT sanitizer and sanitizer water very murky.
Corrective Action(s): Sanitizer needs to be refreshed more frequently especially when restaurant is busy. QUAT sanitizer needs to maintain 200ppm.
Staff refreshed all the sanitizer buckets. QUAT sanitizer measured between 100-200ppm after refresh.
> Manager will get tech to service sanitizer dispenser to ensure it is dispensing at correct concentration.

- Walk in cooler and drink undercounter cooler =<4C
- Prep cooler inserts probed, tomatoes 5C, cream cheese 4C, jalapeno peppers 6C, empty bottom compartment 9C ambient temperature
> Morning temperature log shows 36F (~2.2C)
> Manager will monitor cooler to ensure top insert levels maintain 4C and below.
> Manager will get a tech to service cooler to ensure cooler is working properly
- Walk in freezer at =<-18C
- Hot holding =>60C and time tracked
- High temperature dishwasher measured 81C final rinse at plate level
- Ice Machine is well maintained.
- Manager and staff has valid FOODSAFE equivalent
- No signs of pests, pest control company routinely checks facility
- General sanitation is okay
