Observation:
Inside of high temperature dishwasher has still not been cleaned since Routine Inspection on Friday November 5, 2021. Propellers and inside of dishwasher has heavy accumulation of food debris and grime.
Corrective Action(s):
Clean and sanitize inside of dishwasher. CLEANING MUST BE COMPLETED TODAY BEFORE PLACING ANY MORE DISHES IN DISHWASHER.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
1. Hand washing station near walk-in cooler lacks paper towels and hot/cold running water. Hand sink plumbing issue has still not been fixed since Routine Inspection on November 5, 2021.
2. Hand washing station in dishwashing area was still blocked by a stack of container lids. Person in charge did not know there was a hand sink present there as it was heavily blocked. This sink also lacked liquid soap and paper towels.
3. Dispenser for liquid soap is broken off of hand washing station located upon kitchen entry.
Corrective Action(s):
1. Repair hand sink so there is hot and cold running water, and the sink is fully equipped with liquid soap and paper towels in a dispenser.
2. Remove lids from hand washing sink in dishwashing area. This was completed at the time of inspection. Ensure sink is fully equipped with liquid soap and paper towels in a dispenser.
3. Install new liquid soap dispenser at hand sink by kitchen entry.

Observation:
- Several food items in walk-in cooler still found to be uncovered at the time of inspection.
- Bag of chick peas found directly on the floor in dry storage room.
- Open bag of sugar found in dry storage room.
Corrective Action(s):
Ensure all food items are stored at least 6 inches (15 cm) off the floor in pest proof containers.
All food items need to be covered using food grade lids/plastic.

Observation:
General sanitation of premises still requires improvement, as also indicated on the Routine Inspection report from November 5, 2021, especially for:

- Underneath and behind all shelves and equipment

Observation:
Hand sink near walk-in cooler is turned off due to a plumbing leakage issue.
Corrective Action(s):
Repair plumbing leakage issue so hand sink works properly with both hot and cold running water.

Follow-up Inspection:
- Ventilation canopy has been cleaned.
- High temperature dishwasher sanitizing with 72 degrees Celsius at dish level after final rinse cycle. This temperature was reached after 3 attempts.
***Ensure that the wash cycle reaches at least 60 degrees Celsius, and the rinse cycle reaches at least 82 degrees Celsius on the dials located above the machine for adequate sanitization.***

This follow up inspection had several repeat violations. Repeated violations may lead to further enforcement actions including: Correction Order, Closure Order or a Violation Ticket.
