Observation (CORRECTED DURING INSPECTION): Prep cooler in servery had ambient air temperature measured at 13'C-14'C. Not much food stored in this unit.
Corrective Action(s): Salad dressings moved to the front dessert cooler at this time.

Observation: Rodent droppings observed in the corner of the left storage room. No food products/cooking tools/equipment are stored in this room. No droppings observed from the kitchen, servery and the boiler room at this time.
Corrective Action(s): Ensure to remove all droppings and treat the area with bleach. Wear gloves and use wet paper towels to remove droppings. Monitor for droppings and remove every morning. If new droppings are observed even after filling the gaps, look for other holes/cracks in the room. Ensure to have the door closed at all times to prevent pest entering into the kitchen.

Corrective Action(s): Ensure to have the cooler temperature adjusted or repaired if required. Until then, do not store any potentially hazardous food in this unit.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C, except mentioned above. Freezers operating at required temperature of -18'C.
-Thermometers available for temperature monitoring.
-High temperature dishwasher achieved 72.2'C at the plate level after final rinse.
-200ppm Quats available in a labelled spray bottle.
-General food storage satisfactory, except small freezer and stand up freezer. Ensure to reorganize and have all foods properly covered in these two units. Remove bowls.
-Ventilation canopy hood serviced and maintained. Next service due in August 2019.
-Tools and equipment maintained in sanitary condition.
-General sanitation of the facility satisfactory throughout, except the left storage room. Refer to above.
-Washroom handsink satisfactory. No pest activity observed in other areas.

Follow-up inspection will be conducted on August 7, 2019.
