Observation: Scoops/bowls for the bulk food bins were stored inside the bin together with the food.
Corrective Action(s): Avoid storing scoops/bowls together with food to avoid contamination. Some of the bins have scoop holders built-in, which are acceptable. Alternatively, store them outside the bulk food bin in a container. Date to be completed by: July 4, 2018

- General sanitation is good
- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers at < or = 4C
- Freezers at < or = -18C
- Temperature logs maintained for the coolers and freezers
- Low temperature dishwasher in use. Residual chlorine was measured at 50 ppm.
- Quat sanitizer available at 200 ppm in spray bottles
- Food containers are covered and labelled
- Ice machine is clean. Ice scoop is stored outside of machine.

2nd Floor Servery
- General sanitation is good
- Cooler at < or = 4C
- High temperature dishwasher available but not used very often. Final rinse temperature measured at 76.9C.

3rd Floor Servery
- General sanitation is good
- Cooler at < or = 4C
- High temperature dishwasher in use. Final rinse temperature measured at 74.6C.

4th Floor Servery
- General sanitation is good
*Cooler was measured 5-7C. Monitor this cooler and ensure that temperatures drop to < or = 4C.
*Dishwasher at this servery is not working. Replacement is planned.

Hospice Kitchen
- General sanitation is good
- Cooler at < or = 4C
- Freezer at < or = -18C
- Domestic dishwasher available but not used often. Majority of dishware is washed at the main kitchen dishwasher.
