Comments

Follow up inspection conducted to verify corrective actions which were to be completed:
- Wall behind dishwasher has been cleaned.
- Cooling procedures were reviewed with staff. Staff reported that ice baths are now being used and time/temperature is being monitored; however, only an IR thermometer was present which is not suitable as internal temperature needs to be monitored.
- Holes/gaps in ceilings in storage rooms were filled with steel wool.
- Foam door draft guard were installed under storage room doors; however, foam is not a pest proof material.
- Cleaning was completed in areas where mouse droppings were present; however, level of detail in cleaning was not sufficient. Minor amounts of mouse droppings were still noted on areas of the floor which were identified in routine inspection report to be cleaned. Additional cleaning was completed at time of the inspection.


Additional actions required:
- Obtain probe thermometers for checking internal food temperatures
- Provide updated copy of food safety procedures with cooling step to EHO. (Not available on-site at time of inspection)
- Complete pest proofing of doorways to storage rooms as outlined in routine inspection report. Use pest proof durable materials. Consult with Pest Control Technician regarding pest proofing materials/options.
- Clean up all mouse droppings along edges of floor in area where cardboard is kept prior to disposal. Continue to monitor areas where rodent activity has been noted and ensure areas are cleaned and disinfected if additional droppings are present.
- Have Pest Control Technician place trap in area where cardboard is kept and ensure this area is kept free from grime/debris which may attract pests.
