Follow up inspection with Area Manager & Operator

Sanitizer in both spray bottles at 200ppm Quats
Test strips for Quats on-site and operator has implemented a daily sanitizer check log

Display Management System Progam is now in place - Production logs completed to mark when out of oven and display tags at each shelf with time of disposal. Stickers stating "Keep Me Refrigerated, or Enjoy Me Now" are on order and will be used on each purchase of products covered in the Display Management System. In the interim, operator stated they are notifying customers verbally.

Corrections: do not complete the time of disposal on production log as per Display Management System Program. Also, ensure each product is given one line on the log, please do not write multiple products per line. Operator will also try to store racks in the cooler to extend the shelf life. Provide a separate log to track this. Display tags still required at each shelf.

Cream Cheese container states storage requirements are to be refrigerated, however there is no current procedure to monitor the cream cheese. Area Manager stated that Cobs had previously used a different cream cheese product, but this product has been in place for approximately 4 years. unsure if previous cream cheese product was a shelf stable product which is why it may not have been tracked. Area Manager has reached out to manufacturer of product and will be reaching out to Vancouver Coastal Health for further clarification. In the interim, operator is only icing one rack at a time for a 4 hr holding time and leaving rest of the products cream cheese icing free. These products will be monitored until further clarification is provided on storage requirements for cream cheese at room temperature.
