304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings observed in several areas within the food premises. Mouse droppings were minimal. Pest control contract is in place. Pest control operator is visiting weekly to check traps and identify any potential breaches. No breaches observed during perimeter walk with premises Manager. Traps are stationed both inside and outside the premises. Bin any items that can potentially be chewed into at night. Bins observed in place at time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Heavy grease build up observed in the grease diffusers in the exhaust canopy
Substantial grease accumulation observed on the lower wall surface behind the grill as well as on the floor surface below the grill.
Underside shelving above the food prep surfaces observed with food splatter accumulation.
Corrective Action(s): Grease diffusers are to be cleaned on a regular basis ie weekly.
Remove all grease accumulation as this is a fire hazard
Clean underside of shelving daily

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Sandwich prep cooler opposite the grill not properly cold holding on the bottom side. Ice build up observed inside the unit. Bottom of cooler was loaded recently from the walk in cooler prior to my arrival on site and these items were relocated to the adjacent sandwich prep cooler.
One fluorescent light bulb observed not working in the dry food storage room
Corrective Action(s): Contact technican. Do not use the bottom side until technician has repaired the unit so that it is capable of cold holding at <4c.
Replace burned out bulb in the dry food storage room
