Observation: One cockroach observed in the hallway leading to the back storage. As per the manager, staff/manager were not aware of the cockroach issue until today. Manager is unsure whether the current pest control inspection includes cockroaches.
Corrective Action(s): Ensure to have the recent pest control reports available on site and contact the pest control company to have the facility inspected for cockroaches- if not already- by the follow-up inspection.

Observation: Food debris and pooling of water observed on floors throughout the kitchen, except main cook line.
Corrective Action(s): Ensure to have all food debris/grease/water removed after each shift. Continue to store food in pest proof containers. Use trays when storing condiments on the prep counters.

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Hot-holding units operating above 60'C.
- 200ppm chlorine solution available in buckets to hold wiping rags and labelled spray bottles.
- High temperature dishwasher achieved 74.3'C at the plate level after final rinse.
- Glasswasher achieved minimum required concentration of chlorine (>50ppm) after final rinse.
- Ice machine satisfactory. Scoop stored in proper manner.
- Professional pest control company contracted for monthly visit. Traps in place.
- Washroom handsinks satisfactory (one automatic faucet in women's washroom currently out of order).
