Observation (CORRECTED DURING INSPECTION): Cheese, deli meats, and minestrone soup held at an internal temperature of 6C in the walk-in cooler.
Corrective Action(s): Aforementioned items were transferred to another cooler maintaining approximately 1-2C. Ensure that all potentially hazardous foods are stored at or below 4C to prevent growth of bacteria that could cause foodborne illness.

Observation: Drain area and area around nozzles at soda dispensing machine has accumulated a large amount of mildew and grease.
Corrective Action(s): Turn off and disconnect the device from the water supply. Thoroughly clean-in-place and remove mould and mildew deposits and wipe down with sanitizer. Ensure that the soda machine is kept and maintained in sanitary condition at all times.

Observation: Walk-in cooler at ambient temperature of 7-8C.
Corrective Action(s): Service or adjust the cooler so that it reaches and maintains an ambient temperature of 4C throughout course of day.

Observation (CORRECTED DURING INSPECTION): Both staff members on duty did not have FoodSafe 1.
Corrective Action(s): EHO called owner at time of inspection who had FoodSafe 1. Owner returned on-site. Ensure that at least ONE employee has FoodSafe 1 for all subsequent shifts.

Comments

Routine inspection conducted. Facility generally well-lit and in satisfactory sanitary condition. The following observations were made:

1. Temperatures
- Walk-in cooler at 7-8C (see violation code above)
- Beverage display cooler at 4C
- Sandwich cooler at 4C *NOTE: Please ensure that lids are kept closed at all times when not in use to retain temperature*
- Hot-held soups at 65C
- Stand-up "cooler" outside kitchen at 2C

2. Hygiene and Sanitizing
- Handwash stations in restrooms and kitchen area stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer available at 200 ppm
- High-temperature dishwasher sanitizes at final rinse cycle of 72C (Min: 71C)
- Restrooms are well maintained

3. Storage
- All food items stored at least 6" off floor
- Single-use disposables securely stored in original packaging inside cabinets
- Ingredients securely locked inside plastic food-grade container with tight-fitting lids - good
- Dry storage room is well organized

4. Administrative
- Permit posted and up-to-date

5. Pest Control
- No signs of recent pest activity at time of inspection
- Facility hires professional pest control company to conduct monthly audits
