Observation: Missing ceiling tiles observed in premises, including but not limited to both dishwashing rooms.
Missing tiles / cracks / gaps observed on several areas of the floor that can permit debris and water accumulation.
Holes observed in walls (including but not limited to, dishwashing rooms, laundry room).
Moisture obsered on floor under hand sink located outside of dishwashing room, and on the entire floor of the large pot dishwashing room.
Corrective Action(s): Ensure all holes and cracks are properly sealed, and ensure missing ceiling tiles are properly replaced to help minimize potential entry points for pests. Date to be corrected by: December 12, 2024. Ensure that on a daily basis, moisture is minimized and promptly cleaned, as this can attract pest activity. Ensure cleaning and sanitizing of all food contact surfaces and equipment occurs on a daily basis before each use.

Follow up to Inspection Report # MBEK-DB7ULV.
Walk in cooler at 3 degrees C.
Temperature log sheet for November 2024 is posted and up to date.
High temperature dishwasher achieved 75 degrees C at the utensil surface during the final rinse (required: 71 degrees C or more).
No leaks observed at three compartment sink.
Hand washing sinks supplied with hot and cold running water, liquid soap, and paper towels.
Storage areas (dry food storage area upstairs, downstairs storage room) have been cleaned and organized, but deeper cleaning is still required, particularly for the dry storage room upstairs (e.g. spilled sugar observed on floor). Ensure areas are thoroughly cleaned and sanitized. Obtain bins with lids for storage of food product.
Pest control technician on site at time of inspection, stated premises has been serviced but reports not yet available. Written reports must be available--to be checked at next follow up. Cockroach activity observed in manual pot / large equipment washing room.
