Observation (CORRECTED DURING INSPECTION): 1. 2 large pots of soups hot held at the hot water bath measured with an internal food product temperature of 52C. Due to the size of the pot, hot water bath was unable to maintained the temperature of soups above 60C.
2. Roasted meat hot held at alto-shaam unit measured with an internal food product temperature of 48C. The unit appeared to be turned off.
Corrective Action(s): 1. Do not hot held large pot of food in the aforementioned hot water bath. Transfer the food into smaller containers before hot holding in the hot water bath.
2. Reheat the roasted meat to 74C then hot hold it it above 60C. The breaker for the alto-shaam unit was triped and operator was able to fix the unit.

Observation (CORRECTED DURING INSPECTION): Quats sanitizer inside pail and from the dispenser measured at 0 ppm. Quats stock bottle at the dispenser observed to be empty.
Corrective Action(s): 200 ppm quats sanitizer measured from the dispenser after staff changed the stock quats bottle. Discard and refill all the sanitizing pails and spray bottles in the facility.
