Observation: 1. Dishwasher is running very low on all chemicals (detergent, rinse aid, sanitizer). Sanitizer appears to be discoloured. 0 ppm chlorine residual detected.
2. Bleach sanitizer in bucket measured 10 ppm.
Corrective Action(s): 1. Supply dishwasher with all new chemicals. Use test strip to verify concentration of sanitizer (must be 50-100 ppm). Until new chemicals arrive, manually wash all dishes, utensils, and equipment at the three compartment sink. Follow the three step method as per the manual dishwashing sign (wash, rinse, sanitize). Reviewed manual dishwashing method with operator. Correct by tomorrow.
2. Prepare new bleach sanitizer and ensure it is maintained 100-200 ppm. Prepare fresh sanitizer at least every 2 hours. Correct immediately.
