Inspection conducted for provision of health approval to operate a food service establishment:
--> Operator submitted FSP/SP plans
--> Operator's FoodSafe level 1 certificate has expired. Operator registered to re-take course Feb 16,2019.
--> No major renovations/alterations performed (same layout as previous business --> pizza shop)
- Hand sinks stocked w/ hot/cold H2O, soap, paper towels
- Coolers </=4C: freezers temps satisfactory
- Discussed procedures for cooking meat cones/:
--> All meat must receive a secondary cook-step to ensure it is fully cooked. Ensure to confirm all meats reach an internal temp of 74C or higher
--> Food warmers must hold foods at 60C or higher after cooking completed
- Commercial high-temp dishwasher is present but not operational at time of inspection. This must be restored to operational status within 1 week
*Manual ware-washing/sanitizing in the 2-compartment sink can be performed as a temporary measure until dishwasher is repaired
- Ecolab chlorine sanitizer available for usage as the primary sanitizer for warewashing and sanitizing w/wiping cloths. Ensure to mix a 100+ppm solution by following the mixing directions on the product label. Operator has chlorine test strips to confirm concentration.
- General sanitation is good.
- Received cheque for operating permit in the sum of $37.50 (cheque #00580)
- Approved to operate, subject to the following:
1) Operator to acquire valid FoodSafe Level 1 certification within 30 days
2) Dishwasher must be operational within 7 days
3) All meats from the donair cone must receive a secondary cook step prior to holding in the food warmer. Confirm cooking temps with a probe thermometer (71C beef/lamb, 74C chicken)
