Follow-up inspection
2 door undercounter cooler has been repaired and registered at 4 C or below.
**2 door standing cooler ambient air temperature at 7 C - still requires repairs. Do not use it for the storage of potentially hazardous foods.
Operator stated it will be repaired within the next day.

Low temperature dishwasher registered 50-100 ppm chlorine after running the dishwasher 2 times.
Recommend testing dishwasher multiple times a day.

Discussed with operator cooking procedures for tandoori chicken used in butter chicken - ensure chicken is fully cooked to an internal temperature of 74 C. Partially cooking/browning raw chicken may not fully destroy all pathogens (bacteria) and they may continue to grow during handling or storage.
If the partially cooked chicken will be fully cooked immediately using another method (ex. partially baked and tthen placed in the curry sauce to cook), it would be acceptable.
