Observation (CORRECTED DURING INSPECTION): The following items in the egg station cooler were discarded by the manager due to time and temperature abuse (13 - 13.5C). An internal temperature was measured using recently calibrated probe thermometer:
- egg mixture (~300 ml)
- cooked sausage (half insert)
- egg white (~200 ml)
- shelled eggs (~3 dozens)

Observation: The ambient air temperature of the egg station cooler (located in the middle of the line) was noted at 9.3C by a probe thermometer.
Corrective Action(s): The cooler is to be serviced so that the cooler can keep foods at or below 4C. Do not use this cooler until it is serviced by a technician, and verified by your Environmental Health Officer. Correct this by: March 3, 2021 or as early as possible.

Hygiene and Sanitizing
- Hand washing station (s) equipped with hot and cold running water, liquid soap and paper towels
- General sanitation is adequate
- QUATS sanitizer noted at 200 as per test strips. Test strips available on site
- High temperature dishwasher final rinse cycle noted at 71.3C
- Washroom facility in a sanitary condition
- In-use utensils stored in a sanitary manner (2 dipper wells are time tracked - water replaced every 15-20 mins)
- Adequate handwashing noted
- Staff demonstrates good hygiene

Temperature (Maximum 4°C for coolers and -18°C for freezers, minimum 60°C for hot holding)
- Other than the egg station cooler, temperature of all the coolers were noted at 4C or below.
- Temperature of freezers at an acceptable range
- Temperature of hot holding units noted at or above 60C

- Time tracking in place for most of foods that are prepared on-site

Pest
- Pest control in place; serviced every 2 months.
