Observation: Display fridge was maintaining potentially hazardous foods at 17-19C. Foods were probed during inspection
Corrective Action(s): Operator voluntarily had staff discard 1 breakfast wrap, 5 sausage rolls, 6 spinach and feta croissants and 5 ham and cheese croissants. Ensure all potentially hazardous foods are maintained at 4C or colder. Acquire a fridge thermometer to measure ambient temperature. Do not rely on a infrared thermometer.

- Dishwasher final rinse reached 75C at the plate surface
- Quat sanitizer measured 200ppm residual
- Liquid soap and paper towel at handsinks

Note: staff member measured and recorded 10C for display fridge during morning check but no corrective action was noted nor follow up within 2 hours
