Observation (CORRECTED DURING INSPECTION): Rice scooper in front area was stored in a container at room temperature. Food debris was noted inside the container.
Corrective Action(s): This is a repeat violation. Store rice scooper in ice water to minimize bacterial growth at room temperature. Operator placed scooper in cold water at time of inspection - ensure you refresh the water frequently.

Comments

-Hot-holding unit is storing foods at or above 60C. Internal temperature of insert containing cooked meats measured at 61C.
-Freezer unit (prep area): -17C
-Cooler unit (prep area): 4.7C (see comment below about monitoring cooler temperatures)
-3 freezer units (offsite storage) measured at or below -18C.

-Hand sinks are equipped with hot/cold running water, liquid soap, and paper towels.
-3-compartment sink for manual dishwashing is available. Staff demonstrated knowledge in 3-compartment dishwashing. A bucket is used for the sanitizing step and chlorine concentration measured at 200ppm.
-Wiping cloth stored in sanitizing bucket. Concentration was high as it bleached out test strip. Ensure bleach solution is between 100-200ppm - 1 tsp of bleach in 1L of water.

-General sanitation of site is satisfactory.
-No signs of pest activity. Operator states a pest control company visits once every 2 weeks.
-Packaged foods are stored off the ground in the offsite dry storage.
-Food in cooler units are covered and protected from contamination.

-Per operator, FoodSafe certified staff on duty - verified at time of inspection.

-Per previous inspection report, site to begin daily temperature logs for cooler units. Operator did not have temperature logs at time of inspection. Paper copy given to operator. Ensure temperature logs are documented and used daily.

-No signature required per COVID. Paper copy printed and reviewed with operator.
