Observation (CORRECTED DURING INSPECTION): Found beef to be 50-55 C for more then 2 hours.
Corrective Action(s): Discard food. Turn up hot holding unit as it was set to low before placing new beef inside hot holding unit.

Observation (CORRECTED DURING INSPECTION): 1. Found sanitizer spray bottle to have well above 200 ppm chlorine.
2. Found multiple inserts and other pieces of equipment such as large slicer put away still wet. Slicer had mildew growing as was not dried properly
Corrective Action(s): 1. Ensure chlorine is 1 tsp per litre water in spray bottle and 3 compartment sink.
2. Ensure all items are completely dried before putting away.

Observation: Found grease build up on handles of prep cooler, and on shelves and walls in the back.
Corrective Action(s): Increase cleaning through out premises especially in the above noted areas.

Observation: 1. Slicer is heavily rusting and is no longer easily cleanable.
2. Cutting board in back is heavily worn and is no longer easily cleanable.

2. Replace with new, easily cleanable cutting boards and slicers.
