Walk in cooler 3C in both main area and chicken area

Coolers all 4C and below, except the small Taco Bell prep cooler which ranged between 4C (bottom) to 11C (sauces at top)
**Discussed with supervisor on site - get longer or deeper inserts to prevent the sauce dispensers from getting temperature abused
Hot holding spot checked at Taco Bell meats, gravies/corn, and numerous chicken holding units. All 60C and above
Quat sanitizer buckets available throughout kitchen. Dispenser measured 200ppm quat solution
Dry storage area well maintained
General sanitation of facility good
No evidence of pests. Pest control company on contract
Temperature monitoring records well maintained. Note: cook temps recorded well, hot holding is checked immediately after cooking so is not a true indication of how well the hot holding equipment is functioning.
