-Prep cooler has been serviced and was at 4C.
-Prep cooler needs an accurate thermometer - current thermometer read -1C. Accurate thermometers are important to verify cold holding units are maintaining foods at or below 4C on a consistent basis.
-Monitor prep cooler and service or adjust cooler unit as needed.
*Rice tracking sheet should include instructions for discarding any left over rice after 2 hours of storage below 60C.
