301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Following areas need cleaning immediately:
1. Wooden block cutting board across from bbq duck warmer had food debris on it. It was used but had not been cleaned after use.
2. Dishwasher had chemical/organic build-up accumulated on the top door trim.
3. Handles for coolers and freezers had accumulated food debris and grease (eastern side)
Corrective Action(s): Required operator to clean the noted areas above. Assistant store manager indicated that there will be a thorough cleaning done by the janitorial staff later this week. Please note that if accumulated, staff working on site must clean and sanitize these surfaces immediately. Staff started cleaning at the end of inspection

Kitchen is divided into two areas; Western and Eastern
Western:
-Overall sanitation satisfactory
-One hand washing station stocked with liquid soap and paper towel
-Hot and cold running water available at all sinks
-QUAT sanitizer bottles available; detected 200 ppm of QUAT
-Meat slicers maintained in sanitary conditions
-All coolers at 4 C or lower; all freezers at -18 C or lower
-Three compartment sinks available for manual warewashing; QUAT dispenser in good working order. Detected 200 ppm of QUAT
-Ice machine maintained in sanitary condition
-No sign of pests noted in the area at the time of inspection

Eastern:
-Overall sanitation is satisfactory
-Hand washing stations stocked with liquid soap and paper towel
-Hot and cold running water available at all sinks
-Hot holding units at 60 C or higher
-All coolers at 4 C or lower; all freezers at -18 C or lower
-High temperature dishwasher in good working order; detected 71.5 C at plate level after final rinse cycle
-Three compartment sink available for items that do not fit in the dishwasher
-QUAT sanitizer available; detected 200 ppm of QUAT
-Fan hood maintained in sanitary condition.
-All cold/hot potentially hazardous foods were kept in adequate temperature settings; cold PHFs in either coolers and/or freezers, hot PHFs in hot holding units.
-No sign of pests noted in the area at the time of inspection
