Observation (CORRECTED DURING INSPECTION): Temperature of meatballs in marinara sauce in hot holding unit ranged from 47-52C (this must be 60C at all times). Container was half the size of a full width container leaving half of the space next to the container open, allowing heat to escape from from the hot holding unit. Container was also not in contact with the hot water below the contianer.
Corrective Action(s): Cover placed over the gap in the hot holding unit during inspection. Ensure all hot items are kept 60C or above at all times.

Observation (CORRECTED DURING INSPECTION): Sanitizer bucket had only 50ppm quats sanitizer when 200ppm is required for this type of sanitizer.
Corrective Action(s): Change sanitizer buckets more frequently (at least every 2 hours or when sanitizer looks dirty). Sanitizer bucket changed during inspection.

Observation (CORRECTED DURING INSPECTION): Used soup ladle observed being stored in container with water at room temperature. This gives bacteria very good conditions to grow.
Corrective Action(s): Either store the soup ladle in a hot liquid (in soup or separate hot water bath) or clean soup ladle between each use. Discontinue practice of storing in room temperature water.
