Observation (CORRECTED DURING INSPECTION): Hand wash sink in the meat processing room was not equipped with single use paper towel.
Corrective Action(s): -Hand sink in food processing area or washroom was required to be fully equipped with hand soap, paper towel and hot/cpld running water.
- owner provided paper towel at the time of inspection.
- Please encourage staff washing their hands whenever hands are soiled.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: (1) Meat blood pooling on the floor in the walk in cooler.
(2) Heavy built-up meat debris on the converyer belt of the skinner machine.
(3) Heavy built-up meat debris observed in the drain cover and drain trough. It creates strong odors.
(4) Uniforms observed all over the place in the dry storage area. It attracts flies and creates odours.

Corrective Action(s): (1) Deep cleaning walk in cooler at least bi-weekly. Scrub the floor, rinse and sanitize the floor to prevent contamination and odor.
(2) Replace the conveyer belt.
(3) Clean and sanitize the drain DAILY. SCRUB (drain cover, drain trough) -RINSE - SANITIZE.
(4) Organize the dry storage area. Soiled uniforms have to be placed in a sealed containers for laundry.

Observation: Caulking along the wall observed worn out and dry. Joint surface between the wall and the floor is no longer smooth and easily cleanable. It results in mold growth.
Corrective Action(s): - Remove and replace the old caulking along the wall in the processing room.

- Meat processing area temperature measured 6C.
- Chlorine solution in 3-compartment sink tested at 200ppm
- Food tubs off floor either on the racks or on the pallets.
- No rodent activity observed in the facility.
