Observation (CORRECTED DURING INSPECTION): Wiping cloths initially observed stored on the counters. These were removed and placed into containers of sanitizer.
Corrective Action(s): When wiping cloths are not in use they must always be stored in a container of sanitizer fully submerged. The siolution is to be luke warm ie 75F and changed every 2 hours or as needed depending on the organic load introduced.

Observation: 0ppm chlorine detected in final rinse of the bar glass washer.
Corrective Action(s): Re sanitize all glassware using the kitchen dishwasher

Fan covers and ceiling in walk in cooler observed with dust build up
Ceiling return vents and adjacent ceiling tiles above the dishwasher observed with dust build up
Food spillage observed on the floor inside the walk in freezer
Top back side of sandwich prep coolers as well as under side their lids observed with food debris build up
Grease build up observed on the ceiling of one exhaust canopy unit.
Underside shelving unit above grill observed with grease build up
Corrective Action(s): Clean and sanitize all handles daily.
Remove dust build up as discussed
Clean fllor inside walk in freezer
Clean daily top side of all sandwich prep coolers
Clean exhaust canopy wall surfaces on a regular basis ie weekly
Clean underside of shelving unit above the grill. Underside shelving to be cleaned on a regular basis ie weekly.

1 green wire rack shelving inside the walk in cooler observed to be rusting with flaking paint
Corrective Action(s): Contact technician to have unit serviced. Technicain arrived on site at time of inspection

Observation: Wall damage observed on shelving above the dishwasher. Wall damage observed on lower wall surfaces at service delivery door. Wall damage observed in employee washroom. This is a outstanding item as documented in report on August 21, 2023

**Glasswasher monitoring logs observed not being maintained. Staff could not locate them. Ensure logs are recorded/documented daily to demonstrate you are doing your due diligence
Kitchen dishwasher at 129F and approx 80ppm chlorine in final rinse. Soap dispensed in wash cycle.
All cold holding equipment cold holding at <4c
Ice machine is clean
Hot holding at >60c
Liquid soap and paper towels at hand wash stations
Quat sanitizer tested at 200ppm
