Observation (CORRECTED DURING INSPECTION): 1. Cut avocados and cucumbers were stored in the right sushi line cooler with the cooler turned off at the time. Internal temperature measured at 18C.
2. Raw sashimi was stored in the left sushi line cooler with an internal temperature of 15C. The sliding doors for the cooler was removed and operator stated staffs were cleaning the cooler.
Corrective Action(s): 1. Cut avocados and cucumbers were moved to the under the counter cooler.
2. Operator installed the sliding doors back to the left sushi line cooler. Ambient air temperature measured at 2C after 10 minuets. Do not remove the doors for cleaning when potentially hazardous food is stored inside.

Observation (CORRECTED DURING INSPECTION): Cooked tempura was stored in 2 cookers. Internal temperature measured at 34C.
Corrective Action(s): Operator discarded aforementioned cooked tempura. Tempura must be stored below 4C or above 60C. Alternatively, time track the cooked tempura and record the time on a record.

Observation: Rodent droppings noted around the south facing wall in the wooden cabinet and behind the refrigeration units. Pest control reports available for review.
Corrective Action(s): Clean up the rodent droppings and continue monitor for rodent activities. Contact your professional pest control company if required. Correct by: Oct 7, 2022.
