301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Knives and their stainless steel storage containers had buildup of food debris inside them.
Corrective Action(s): Operator washed, rinsed, and sanitized the knives and storage containers during the inspection and placed them into a dishwashing basket to air dry them.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Open metal can of corn was stored inside the refrigeration unit.
2) Extra empty storage containers were observed stored on the floor. One empty container was stored over a garbage bin. A Styrofoam container with raw broccoli inside it was stored over the second garbage container.
3) Two personal jackets were hanging in the dry storage area near packaged dry storage containers.
Corrective Action(s): 1) Contents of the metal can were transferred into a reusable container by the Operator during the inspection.
2) Broccoli was transferred into a reusable container that was stored on a utility cart. Styrofoam container was discarded. Empty container observed over the garbage can was placed into the 3-compartment sink for cleaning and sanitizing. Containers were re-located at least 6 inches off the floor on a shelf during the inspection.
3) Personal jackets were re-located to an empty shelf and hooks on the entrance door to separate them from dry goods.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of debris was evident in the floor and wall near the domestic cooler, inside the domestic cooler, and floor and wall across from the 3-compartment sink.
Corrective Action(s): Clean the above-mentioned areas (floors and walls) to remove the build-up; Correct within 2 weeks. Clean and sanitize inside the domestic cooler today.

Comments

Both handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler was at 1.9 degrees C (4 degrees C or less) and it was equipped with a thermometer.
Ready to eat food was stored on separate shelving units than raw meat. Raw meat was stored on separate and lower shelving units inside the walk-in-cooler.
Domestic cooler was at 0.1 degrees C (4 degrees C or less) and was equipped with a thermometer.
Freezer component of domestic refrigeration unit and three chest freezers were at or below -18 degrees C (temperatures measured between -20 and -24 degrees C).
Rice was being heated during the inspection. Cooking temperature reached at least 74 degrees C by the end of its' cooking and rice was then being hot-held inside the rice warmers. Make sure it stays at or above 60 degrees C during the hot-holding.
Probe thermometer was available on-site.
Pork wontons cooked during the inspection were at or above 74 degrees C.
Previously cooled food inside the walk-in-cooler was at or below 4 degrees C.
No signs of recent pest activity were evident at the time of inspection.
100-200 ppm chlorine sanitizer was available a container with a wiping cloth and inside the third compartment sink.
Ventilation hood and prep. table appeared to be in a clean condition.
