Observation: Sanitizer in rag buckets from 0ppm to 50ppm of Quat at the time of inspection.
Corrective Action(s): Immediately. Change the sanitizer. Get test strips that staff members can verified a concentration of the sanitizer (quat sanitizer must be 200ppm).

Observation: Small amount of mice droppings observed on the floor in a far back storage room (under shelf with bread).
Corrective Action(s): Clean all mice droppings. Note: Pest service present. Traps are set and empty.

Observation: -Food debris & grease observed between and under hot cooking equipment (hard to reach area).
- Food debris in the corner of the prep.table/behind a slicer; and back of lids for prep. coolers.
Corrective Action(s): -Deep cleaning has to be done.

Observation: -Plastic insert container with water noted under the dishwasher pipes.
- Bare wood storage shelves above prep. tables and bottom of counters (under garbage bin)

-Bare wood must be sealed (must be easy to clean and sanitize).

Note: Please take care about a dirty thermometer in the cold unit, which located near the toaster/this thermometer is not properly attached also.
-Ice cream scoops stored in a sanitary manner at the time of inspection.
-Hot holding unit (for soups and sauces) at or above 60C.
-Dry foods storage - satisfactory.
-Low temperature dishwasher achieved 50 ppm chlorine residual on rinse cycle (test strips available).
-Ice maker - clean. Ice scoop stored outside machine.
-Surface sanitizer (spray/front) at 200 ppm.
-Fume-hood in sanitary condition.
-Staff washroom - clean and fully stocked.
