Observation:
1) The central prep table has accumulated flour on the storage shelf below the top and on the floor under the table. This will attract pests.
2) The exhaust canopy requires to be cleaned by a professional company to remove debris in the vent stack. Accumulated debris poses a fire hazard.
Corrective Action(s):
1) Clean the floor and lower shelves every night to remove the flour. Remove the pieces of wood on the floor under the table to allow easy cleaning of the floor.

2) Contract a professional company to clean the exhaust canopy and vent. Follow the cleaning schedule of this item as per the professional's recommendations.

Observation:
1) The floor, in the walk-in-cooler side, is worn in may areas and the raw cement is showing. Unsealed cement will absorb foods and attract pests.
2) The light level, in the walk-in-cooler side, is low. This prevents staff from seeing dirty areas, and hampers the ability to clean proper.
Corrective Action(s):
1) Clean and reseal the cement floor to allow proper cleaning.

2) Install more light fixtures to increase the light level to 540 luxes.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; thermometers present; and temperatures monitored.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer used in spray bottles, [Cl2] was 200ppm.
- Foods store in food grade containers; covered; labeled; date coded; stored in groups with proteins separate from RTE foods; and stored 6" off the floor on shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory, improvement needed in mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.
- Dough making side has coving installed along the base of all walls; and openings in walls have been sealed and painted.
- Running hot and cold water exits the prep sink in the dough making side.
