Observation (CORRECTED DURING INSPECTION): Rice within one of the rice cooker was recorded at an internal temperature of 56C .
Corrective Action(s): Ensure that hot potentially hazardous food is stored at an internal temperature of at least 60C. Discard all the rice within the rice cooker. Corrected at the time of inspection.

Observation: Raw meat and vegetables in and under the prep cooler at the cook line is uncovered from contamination. Raw meat are stored above ready-to-eat foods (cooked meat, vegetable, tamago, etc.) in the coolers, freezers, and walk-in cooler.
Corrective Action(s): Cover all food in and under the prep cooler. Store all raw meat underneath all ready-to-eat foods in all cold-holding units. Corrected by: Immediately.

Corrective Action(s): Clean and disinfect the floor undernealth the gas range. Have the exhaust hood serviced and cleaned to ensure that it is free from built-up of debris and grease. Corrected by: March 2, 2021. Repeat violation.

Observation: Prep cooler in the cook line is holding temperature at 5C and stand-up cooler at 7C. One rice cooker is holding temperature at 54C.
Corrective Action(s): Service or replace the two coolers and rice cooker. Repeat Violation for the malfunctioning of the rice cooker at holding proper temperature of 60C or higher. Rice cooker and prep cooler to be corrected by: March 2, 2021. Stand-up cooler to be corrected by: March 16, 2021.

Routine Inspection conducted today.
COVID-19 compliance conducted. COVID-19 Safety Plan onsite and posted. Mask policy in place. Physical distancing decals in place. Sanitizer available for customer use. Contact information of customer collected and retained for at least 30 days. Signage posted at front door to advise people who display COVID-19 symptoms to not enter. Plexiglass barrier in place at front till. NOTE: Have a sheet documenting health checks of all employees before entering work.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Dishwasher sanitizing at 73C at the plate level.
Chlorine sanitizer bucket at the back of house and front of house 100ppm.
Freezers and the prep cooler beside the stand-up cooler met health requirements.
No signs of pests observed at the time of inspection.

Leaking cold water faucet near the cook line has been repaired.
