Routine inspection with the presence of the owner. - General sanitation was Ok. - Hand wash sink was equipped with hand soap, paper towel and hot/cold running water. - Walk in cooler 0.7C. Prep cooler top and bottom - satisfactory; - Walk in freezer, 2 chest freezers, upright freezer < -18C - Bleach sanitizer 100ppm for sanitizing the surfaces. - Owner knows to chill sauce by small portions inside the cooler and stir till the temperature down to 4C- excellent! - 2 compartment sink was available for cleaning and sanitation - Exhaust hood just cleaned 2 weeks ago. - Food stored off floor and properly covered. - No pest activity observed during inspection. Note: Discussion has been made with the owner: 1. recommend to replace the chest freezer (the one with tapes on) 2. recommend to replace the pizza pans holding cart (food debris built up and not easy to clean) 3. Use food grade plastic film to cover pizza dough.
