Observation (CORRECTED DURING INSPECTION): Concentration of sanitizer supply chemical (chlorine) for the dishwashing machine is too low to effectively sanitize dishware. It appears that the sanitizer is old/degraded.
Corrective Action(s): Directed employees to replace the sanizer supply chemical with a fresh bucket. Sanitizer concentration during the rinse cycle of the dishwasher is now >50ppm chlorine. Please ensure the following actions are performed:
*Check chlorine sanitizer concentration for the dishwasher daily using chlorine test papers (on top of dishwashing machine)
*When changing chemicals for the dishwasher, make sure to run the supply pumps for ~1 minute to remove air bubbles and/or depleted chemical from the supply tubes.
